The Clash - London Calling - Because they're the only band that matters

I came of age at the time of The Clash, but didn't get into them until much later, as I did with all the punk bands. Now, I can't get enough of them. Two outstanding videos on The Clash, both on Youtube in several episodes are Westway To The World and The Future Is Unwritten.

Some of the others I couldn't live without:
Who's Next -- No explanation necessary
Wolves In Wolves Clothing -- NoFX (The punk album I would like to make if I made punk albums)
Sorry Ma, Forgot To Take Out The Trash -- The Replacements debut (I got the reissue with the extra songs that include the wonderful outtakes "Like You" and "Get Lost")

Often I listen to folkie-songwriters like Bruce Cockburn, Joe Ely, Fred Eaglesmith in an attempt to learn from them & improve my own feeble efforts.

But sometimes, only pedal-to-the-metal rock will do the job; Horton Heat, Thorogood, Clash

And I'll occasionally pull out Little Feat's "Waiting for Columbus" for a reminder of how good a live album can be :D

For sheer production quality, Otis Taylor's "Truth is Not Fiction" is a standout for me.
It was the first CD I ever heard that actually outclassed vinyl, especially in some of the bass tracks. It wouldn't be on the list if I didn't also love the music though. Kind of "Blues with a worldbeat flavor". So it's got a special place among many others I could name purely for reasons of personal taste.
