Cornbread and Milk

I think, based on some of the descriptions here, that I've never had real cornbread like you are talking about. Having said that, I do like whatever it is that I've eaten, but tend to stay away from it because of my diabetes.

I am a Type 1 diabetic - 4 shots a day for 38 years - and when my wife cooks cornbread in a skillet, a eat the crust- about an inches edge 8" long and stop. Stopping is difficult. Ha

We love cornbread in our house... when my son was small, chili and cornbread was one of his favorite meals (PB&J and grilled cheese were the other two).

Chili and cornbread... sometimes the cornbread on the side, sometimes in the bottom of the chili bowl...
Cornbread with butter (well, margarine, these days!) and honey...
Cornbread with maple syrup (sometimes I eat this for dessert)...

I also love cornbread pancakes...
