Chazmo:I think, based on some of the descriptions here, that I've never had real cornbread like you are talking about. Having said that, I do like whatever it is that I've eaten, but tend to stay away from it because of my diabetes.
I am a Type 1 diabetic - 4 shots a day for 38 years - and when my wife cooks cornbread in a skillet, a eat the crust- about an inches edge 8" long and stop. Stopping is difficult. Ha
