Biggest threads by category?
Can you be more specific? If you mean (for example) threads that have anything to do with Starfire IIIs, that's tough. It's not impossible, but it would be a lot more work because there's no database entry for that so it would need to include a text search through posts (or at least the main post) and that adds significantly to the work involved.

If you mean biggest thread by subforum, that's simpler. Edit - see below.

I should also add that do to the "pro-veer" nature of LTG, the title of "longest thread" in such a search would likely be meaningless, or it might mean "thread with the biggest veer" as opposed to "most informative". :)

Forum with most threads?
You can see that on the front page. The top answer may surprise you. :)

Is there such a thing as a maple twist? That's my favorite format and my favorite glaze!! I've never seen one though..... 🍩

Closest I'd found is a maple frosting on a Dunkin Donut. That sounds like a great idea and it shouldn't be too difficult for a baker to make a few and see if they live up to the hope.

Maple-bacon donuts were a thing around here for a while: Maple glaze with bits o' bacon generously sprinkled while the glaze was still warm.

They are as good as you can imagine.

There are currently ~11400 posts in that thread.

It's been almost exactly four months since I posted this and thought it would be fun to update:

In retrospect it should have been obvious, but most of the longest posts are quotes of one kind or another. My Freaking Spammers post is a report of the thousands of spammer names I banned. Qvart's S100 threads are in the top five because they include a large number of URLs which burn up a lot of characters. Some of them are just flat-out copy/pastes of articles found elsewhere.

Still, it was a fun exercise.
