For flattops at least, the neckblock stamp was put there on completion of the rim, which occurred before the neck was mounted:

Frono and I have discussed whether necks were stamped prior to being attached to the body. I'm very sure that at certain times at least, specifically during late'90's, the necks were stamped after the guitar was completely assembled, just before being finished (NCL).
From post #14 in that thread:
"During 1999, Joe Fusaro wrote up
the numbers he had stamped on a group of JF-30s that he was about to finish and the last number for that day, which was Jan. 26, 1999, was ser. # AJ302733."
Things may have been done differently at different times, and electrics, especially solid-bodies, may also have used different procedures.
