1). Chile caribe (red chile flakes from Fernandez Chile Co. in Alamosa, CO), mixed with water, a little salt, and garlic to make a paste. Stored in the fridge in a lidded jar it will keep for a couple of weeks. Goes on and in everything, including vanilla ice cream. Pop always had a jar handy and so do I.

2). Harissa, when DiBruno's has the good stuff in the refrigerator case.

3). Any mustard, from whole grain to French's.

Various hot sauces, Tabasco being a favorite. Frank's is good too
