I stumbled on an episode of my 600 lb. (or is it 900?) life a while ago, and when the person profiled said what his daily intake was, he included a quart of maple syrup that he drank strait down. IIRC, his daily calorie intake was probably around what I eat in a week!

Musta been that grade A light stuff, it's weak enough to drink straight.

I like Grade B, the stuff with the transparency of used motor oil. That's why I dumb it down with coffee sometimes, otherwise the high carb concentration makes my teeth numb.

At least I think it's the carbs.

Yeah, my late Vermont born and raised b-in-law always said the darker stuff was better.

Ran across a good article while I was confirming my memory "B" is actually the top grade, confirms what he says. Of note is that the early run light stuff has more vanillins in it whereas it gets progressively darker and more "maple-y" over the season:

Fall colors are just starting to appear here.
Very early still, here, but just starting a bit. I noticed that a few individual trees that have always turned early, sometimes in August, haven't this year. Don't know what that means, but is interesting.
