Sushi and sashimi are wonderful, especially when the chef is outstanding and the seafood is high quality. Some of my nigiri favorites are unagi (barbecued eel) and saba (mackerel). I often make different kinds of maki rolls for the family.
Ceviche is also a treat, but only when the fish or shellfish is of good quality.

My wife's family introduced me to Swedish Gustafskorv, which is a cured and smoked sausage made of horsemeat. It's also delicious!I ate everything in Japan EXCEPT the horse meat. I said "Nooooo Wilbur!" I don't think they got it because they didn't have the Mr. Ed Show.
