I'm glad provolone cheese is OK. That's what I would prefer. Going with Whiz just seem like the strong taste would take away from some good fried meat and onions.

Well that's a plus!

Swiss is lowest salt of cheese I've found be does not melt properly for this application.

And you'd get jeered into years of therapy if you tried to order "Swiss wit" at a Philly cheesesteak joint.

I was wondering that, too. I thought they were made with roast beef and I think the business just happens to have pork in the name, but I'm too far south to have any expertise on the subject so that's just a guess.

What the article did not say was that John has been making sandwiches for a very long time and he had previously perfected his skills in neighboring New Jersey where he successfully built businesses specializing in both Taylor Ham and pork roll based creations.

I've never seen a " philly cheesesteak " sandwich made of anything but beef. All the recipes I just looked up have beef. Hense the question?
