Tacos de lengua

Our son made beef tongue tacos on Easter. They were excellent! Tacos de lengua, baby!

I have some serious hesitation about eating that version of tacos. Why tongue? Does it better fit your adjusted eating guidelines?

It's muscle, like any meat I care to eat. I don't eat anything that can be transplanted. Lung, liver, kidney.

Tongue - the food that tastes you back.

Mom used to serve it, the whole thing, on a platter.

Can't even find a picture of such a thing, it would offend people's sensibilities.

Another amazing piece from the other end, the tail.

Ox Tail Soup, nothing like it, the gelatinous broth.

Good for old knees.

Whenever we butchered a steer my Dad would make oxtail soup.

I wish my husband would agree to butcher a steer. I wanted to eat Opey.

Maybe I should stop naming the cows.

I won't be making tacos de lengua because I don't want to prepare the meat from just a big ol' tongue.

I'm not much of a salad fan, but I have eaten a few vegan tacos recently. I'm not a vegan/vegetarian and didn't want to hurt the host's feelings by not showing up for dinner. So we did, and the vegan tacos were fantastic. Don't ask me what was in there; sometimes it's better not to ask.

We have a vegan taco place right down the street next to where the old Liberace Museum used to be. Haven't been yet, but I hear it's really good!!

I must admit that I love Mexican lengua. I also like it in different styles like Kosher, Japanese, and Filipino. It's basically super tender beef. Yums!
