We roasted the veggies from the market (similar to your recipe) and topped them with a very smooth roasted red pepper and tomato soup.

Grilled cheese on the side with a nice, chilled glass of Pinot Grigio.

Yep, snow in July, indeed!
We celebrated the 4th by snowshoeing up to the ridge you see in the background.
We had a heavy-snow winter in the mountains and the cool spring/early summer did little to lighten the load.

It's a great backyard, :wink:
