2011 Gibson Les Paul Satin Setup

I am new to Les Pauls which is why I am asking the questions listed below. I purchased the guitar in mint condition from the 1st owner. Low E side of the bridge #6 string, was set twice as high as the #1 string side. Also the action was set fairly high to clear the ridiculously high height of the bridge humbucker. Any ideas as to why this would be set up this way?

My aim is to lower the bridge and saddle, lower the bridge humbucker and lower the action in the process without creating any fret buzz, etc.

Sounds like it was setup by someone who really didn't know what they were doing. I would do a setup from scratch: get the neck adjusted (careful with the truss rod, small adjustments, let it settle, etc.), make sure the nut is properly slotted, lower the bridge pup out of the way, lower the bridge to your desired string height, and then, once everything is working well for you, adjust the pickup height to their optimum.
