I just watched a furniture guy do a guitar restoration on an old 7 string. I think they said it was German made?

The back and sides are astounding. What kind of wood is that?

Anyone have a clue how old the guitar might be?

Back wood at about 10:00, manufacturer stamp at 10:10.

From the maker's stamp, I would think Estonia, it reads Tallinnas, close to the English Tallinn, capital of Estonia. Also, close enough to Russia where the 7 string guitar has long been a staple. As to the wood, probably some sort of maple, it was common in guitars in parts of Europe. Best guess is late 19th early 20th C.
Just looked below the video on YT and it says made in Tallin between 1907 & 1940.

Tallinnas = Tallinn
Hermanni T. Nr 1 = Street name and number
EESTI = Estonia

Tönis Olbrei was a piano maker, his brother Jann and August Kraemann, a builder, merged their companies and started making pianos, harmoniums, mandolins, guitars and other musical instruments in 1905.
So I'd say that guitar is from earliest 1905 or a bit younger like up to 1915 or so.

The wood seems to be a nice maple where the stain over 100 years went deep into the wood, so they achieved a deep flame what you see today on PRS guitars for instance...
