So the smoked turkey carcass/leftovers have been chilling out in the garage. Ditto for the beer. Nice thing about the cold weather, the garage doubles as a refrigerator.

First I'll boil down the carcass to make some nice stock. Add onions, carrots, green beans, garlic, celery, mushrooms, salt & pepper, limes, basil, cilantro.
No rice, noodles, or carby stuff.

Smoked turkey soup sounds great on a cold night!

One of my favorite things about Thanksgiving is the leftovers. Soup, sandwich (with cranberry of course), turkey salad, in an omelette, on pasta, turkey curry… endless uses.

She Who Must Be Obeyed did a nice Shepherd's Pie with the herbed butter roasted turkey leftovers. And in observance of her house dietary rules, no peas were harmed in its making. Green beans instead. 'Twas good two nights in a row.

Plus I got to deploy my Searzall to impart just the right degree of toastiness to the mashed potatoes.

Although we had ribs for Thanksgiving, my son was given a turkey from work that was already defrosted. I spent yesterday breaking it down and we had a second Thanksgiving meal of only dark meat on Sunday night.

I boned out breast and I'm going to stuff it with sausage, shallots, mushrooms, herbs, and breadcrumbs, and roast for tomorrow. I currently have the back and bones boiling for a soup as well. We got our turkey after all!

I added chopped zucchini, poblano pepper, and jalapeno as well.
