Pork shoulder/veggie soup - yum! Made with the leftover juice and pork from Easter. And a whole lotta veggies goin' on.

I mentioned at dinner last week that split pea soup made with the leftover ham bone was my favorite thing about Easter. My daughter seem to think that was a bit sacreligious 🤷‍♂️

Split pea soup made from ham hocks is soooo good!! Haven't made it in years. Maybe I'm inspired. Unfortunately it's gonna be too hot soon to enjoy hot soup. So time is short.....

Met up with an old friend yesterday and ordered lentil and sausage soup. Boy was it good!!

I've been experimenting with making soup from no salt Udon noodles, 1 cup of low salt broth ( beef or chicken ) , a few spoons of Indian Simmer Sauce from a jar, ( 180mg salt per 1/4cup. I don't use that much. ) and what ever veggies and meat I have. The simmer sauce gives the flavor, really. It's quick and easy and way less salt than any soup I can find. I'm thinking it's in the 300-400mg sodium for a big bowl of noodles and stuff.
