The kids just bought me a nice big electric smoker with auto-feed pellets. Watch out world! First up, smoked trout fillets!

The lovely Mrs. Dread took it upon herself to assemble my new smoker. I am currently brining 3 lb. of fresh Lake Trout prior to smoking. Stay tuned...

The Lake Trout wasn't cheap, but still only half the price of already smoked.

Rinsing the fish after brining, will lower the sodium.
