I'm sure it's for cosmetic consistency. It also lets them use wood that doesn't look as nice, and is therefore cheaper. For example, the rosewood headstock veneer on this has a dark patch in the upper left in the photo. Not a defect, just a coloration difference. The mahogany neck has a couple of dark streaks; you can see one down along the heel in the picture of the back.
