From a quick glance these look like the same guitar. But looking closer the CE looks deeper.
Anyone care to enlighten me. Is there a noticeable difference in these 2 models plugged in?

Yes, the CE100D is about 1.25 inches deeper than the SFIII. My NS CE100 had much stronger bass response response compared to the NS SFIII. So much so, that it was really better suited for jazz and blues than the bright power pop and rock that I prefer to play. The CE100 was also acoustically louder than the SFIII.

These are vintage models, but the thickness difference is likely very similar:

Are the new Starfires maple?

Historically the CE100 was maple and the Starfires were a maple mahogany mix in the laminate, although it varies over time. My 2002 starfire is all maple, for example

Your 2002 is maple laminate as well. All "normal" Starfires were/are using laminated wood. If the 2002 laminate from Corona was 100% maple used or if there is any other wood between the maple sheets is unknown to me.

The current Newark St. Starfires are using either maple or mahogany laminate, depending on finish. Same like in the vintage models.

Currently there is no CE-100 offered in the Newark St. line anymore.

I don’t think there are any Maple NS Starfire IIIs, thought the Starfire I SC is if memory serves.

You're right, of course. More accurate to say it all 'looks like' maple.
