It will be a bit different. Standard MIDI is 10 pin, I think, and can interface directly with a MIDI in on a MIDI equipped sound card. Most guitar pickups use the Roland 13 pin interface, except for the newer Fishman Tripleplay stuff, which uses USB or Bluetooth. The Roland 13 pin pickups require an intermediary device to covert the 13 pin to 10 pin or USB.
I would probably be using the 13 pin interface, since I have an instrument with it.
Notation capture software is probably fairly generic. Although there maybe apps massaged for guitar. I don't know. I am just starting to explore.
I made the comment because I have a vague recollection that the notation capture was wonky enough that, once the editing program was mastered, it was easier just to edit the notation directly than to use some other device for entry and fix the mistakes.
The state of the art may be better than that because there is teaching software that will monitor your playing in real time and note your mistakes.
