I really don't feel like i've got 'em down unless I can do the song entirely from memory, both music and lyrics.

Two that I am learning:

"To Make You Feel My Love," Bob Dylan

"I Hope That I Don't Fall In Love With You," Tom Waites

"Me and Jesus"
There just something about that song that takes me back to "my rasin" on Grices Creek in the 50s. Easy song to play.

I've been doing that one with my bluegrass band for years!

One of my favorites along with "Old Country Church" by Hank Williams, Sr.
Other versions OK by quartets but they just knock on my heart's door. Hank Sr. makes his self at home inside my heart with his version.

Used to play the Dylan song ala Adele with a female singer.

Working on Summertime - Doc Watson/ Billy Strings & Marcus King style.

And on Dust In a Baggie and Tenessee Stud.
