I had a hankerin' for a summer salad when I saw they had nice fresh cukes at the market for $.59 ea.

3 thin sliced cukes, red onions, apple cider vinegar, coarse ground black pepper, 2 TBSP real maple syrup, marinate in the fridge and enjoy! For an added treat, add cubed watermelon just before serving.

Damn I knew the climate was chainging but hankering for a summer salad in April? ;-)

That sounds really good but where is the oil? I'd probably add 1/4cup of olive oil (or glug glug glug glug ;-), I think it's still really good for you, but what do I know? And olives too, black olives, kalamata, yum...

Also a twist on cuke salad, if you had a lot of cukes, like we do... Add plain yoghurt, dill and other herbs, that's a Greek Tzatziki dressing, pretty good.

You're right ga, I forgot to mention the olive oil! I used about 1/8 c.
