Tasty variation on a traditional Summer Salad

4 cukes, skinned and sliced into round pieces
1 red onion, sliced (not diced)
3 C white vinegar
1/4 C sugar
1 T balsamic vinegar
Course Ground black pepper to taste

Mix ingredients in bowl, then refrigerate/marinate for at least 2 hours.

Just prior to serving, add a bunch of cold cubed watermelon to the mix. (It's better if you don't let the watermelon marinate with the other stuff.)

I made a blackeyed pea salad the other day that was killer. Actually they pinkeyed peas...they eat just like the black ones. Freshly picked and shelled by the local farmers market. Bought a half bushel of them for the freezer.

My mom made a similar cuke and onion salad, only more sugar and no watermelon.

Yeah, with the watermelon you don't need to add much sugar.

Only salad we had growing up was Polk Salad with scrambled eggs. Momma's one piece of advice was, "go out by the garden and pick us some young Polk Salad." We grew Cucumbers to make all kinds of pickles-no salads.
I like Cuke salads, now.

And don't get the wrong idea that poke "salad" means it's uncooked, boys and girls.
The reason it was poor folks' food is that it's actually pretty toxic, if eaten raw..... :eek:
