My neighbor brought over a bunch of fresh Rhubarb, so I made Rhubarb sauce; boiled down the Rhubarb in the Instant Pot, then mashed it with honey, only two ingredients. I got six freezer bags full. It makes great topping for vanilla ice cream among other things.

...and there was something in the news a few days ago about some benefits of eating rhubarb.

Oooh -- that sounds good Dread. I've never had rhubarb with honey, and I'll have to try that.
My wife always makes it into a traditional Swedish fruit soup called rabarberkräm, which translates simply into "rhubarb cream." It's rhubarb boiled with water, sugar, and little potato flour. Then you add a little cream. It can be served warm or cold at any mealtime. My boys devour it.
