New to me - a slice of history

I've been looking on and off for an old meat slicer to play with, and one popped up locally at a decent price (<$200) so I went ahead and did it. It's a USA-made Berkel 808, something you would see at a deli counter or restaurant. Weighs about 90 pounds! Now the fun begins - a full tear down and sanitizing. Everything is there and it runs fine. Parts are still available so that helps. Lots of ideas for what to slice down the road: pit beef, turkey, ham. Anyone else here have something like this?

Be very careful with that. I worked with one years… decades ago. I’ve seen more than one person who has lost a finger.

Roger that. The space is an unused single garage on the lower level. We do a lot of canning and needed a second kitchen anyway. I've been accumulating various tables and appliances over the years - almost all from Craigslist. We had the floor done last year. Not epoxy, something better according to my research. I really like it. More to do...it's a work in progress.

I had a much smaller home kitchen type. I used it once. When turned on it sounded like a table saw. I guess it kinda was. I was terrified of it.

Don't know whatever happened to it. It could still be around here in the shed or somewhere, but can't say for sure.

Yes, please be very careful.

That is a really nice set up Marty! I’m addition to CL look into restaurant auctions. Business always going under, changing locations or upgrading. Good way to get commercial grade gear on the cheap.

Marty that's amazing. I've always wanted a slicer but never had the kitchen to handle such a huge piece of equipment!! My fave thing to shave, would be cabbage for the BEST coleslaw EVER!! We just got some from Winchell's (the pub and gaming bar, not the doughnut place) and they make that stuff soooo good. Plus tuna melt and BLT!! So we each get a half of tuna melt, blt, and coleslaw!! I love that slicer!! :love:

That slicer evokes bad memories of when I was a prep cook at the Last Chance Saloon in Columbia, MD in the mid 1980’s

When I worked in a kitchen as a teenager, the slicer was a Globe Gravity Feed. Somehow I've never forgotten the name.

We have the same Hobart auto slicer in the kitchen of my boss' restaurant at the property where I work. On auto mode, you'd better have a Very secure table to set it on. I went as far as mounting latches on the table that can attach to the stainless steel on the kitchen wall. On auto slice mode, it can make the whole table wobble like crazy from the constant weight shifting back and forth. I do all the maintenance on it. Blade sharpening/replacing sharpening wheels, lubricating, etc. When well maintained, they can last forever!! Great slicer!! (y)

In my butcher shop days throughout high school, I had to tear down three Hobart slicers every night and clean them, in addition to an entire shop full of dangerous machinery. One has to maintain the same mindset as when working with a table saw. Yikes! They were awesome nonetheless and were real workhorses.

Love the second kitchen space. What a nice luxury!

Oh wow, that is a deli slicer if ever there was one! I worked at a 7-11 where we had one and I loved slicing up those big hunks of Boars Head roast beef into paper thin wafers. One day my coworker sliced the tip of their finger and turned the swiss a spotted red, so yea, do be careful. And congrats, that is a killer 2nd kitchen set up. Wanna come here and help me organize my garage? lol
