I've owned hundreds of Fenders and Gretsches and probably a dozen Gibsons.
I recently had been doing some research on the NS Guilds and when I learned the nut widths are 43mms I had to try one.
I just grabbed one off Sweetwater. I was shocked by the quality of it. I was expecting far less to be honest.

One big question is I see a lot of the NS have serial #s stamped on the back of the headstocks. Mine doesn't. Would that indicate it's a second or something else?

Welcome. I don't recall any reports about NS seconds or any NS instrument without a serial number so someone else will need to comment.

Have you asked Sweetwater if they know anything? I'd think they've got enough experience with Guild to know if it is in fact a second, in fact I think they might be legally bound to disclose it. It would affect the warranty status if sold as new.
Don't mean to imply anything shady on their part, I think I've heard enough good things about 'em and I could see how something like that could be overlooked.

From Sweetwater's site, it looks like the NS Starfires don't have the SN on the back of the headstock. It's on the label inside the upper f-hole isn't it?

Welcome to LTG!
I bet it has a KSG15xxxxx serial number on the label? (means basically 2015 made)
CMG, the new owner of Guild seems to have stopped the SPG factory printing the serial number and Made in Korea on the back of the headstock for guitars that have a internal label as both info is on the label anyway. It's something we had not discussed yet but KSG14xxxxx serial number still had the info also on the back of the headstock so it's the only logical explanation I think.
