It's chili season! Lots of fresh tomatoes, peppers, tomatillos, onions, jalapenos, etc.

So my son and I made a huge cauldron full of chili today. It's for his "diaper party" tomorrow, the male equivalent of a baby shower and everyone brings diapers. (yeah, I didn't know that was "a thing" either.)

Anyway, this batch has 8 pounds of meat - four ground sirloin, 2 breakfast sausage, 2 sirloin steak pieces. And of course, no beans.

Now I ain't sayin' this is the best chili I ever made. Oh what the heck, yes I am. A fair amount of heat as per usual, but not "burn your mouth off" hot.

We also made a big batch of guacamole with lots of fresh ingredients. To be eaten with our local "El Matador" tortilla chips.

The chili and the guac are chilling in the fridge for tomorrow.

This is all gonna make for some full bellies!

My son is actually becoming quite the chef. The apple doesn't fall far from the tree.

We're figuring 20 people. The forecast is for rain, so we'll probably stay inside and watch the Lions lose to Philadelphia.

Breakfast sausage? Interesting. For the pork/sage content?

It is getting to be that season.

What's the odd/unexpected ingredient in everyone's chili? For me, it's a little bit of unsweetened cocoa. Adds just a bit of flavor, but really makes a contribution to the texture/mouth feel.

Yeah, I usually do 2/3 ground sirloin and 1/3 breakfast sausage.

And it's full of chili. Its really good but I would add a couple more jalapenos if I had them, I like it hot!

Everybody absolutely inhaled that chili - gone!

Guacamole - gone too.

That's what happened but I am impressed. If the Lions don't drop the eleventy-seven passes that they dropped that that was a different game.

The Lions are for real and any NFL team that doesn't believe it is in for trouble.

I wish I could make really spicy chili for my family, but most of them don't like the extreme heat. My daughters can handle some, but my wife can't, and I get dirty looks if it's too hot.

Do we have to go there again?

Some places require meat only to be labelled chili. Others require both meat and beans to be labelled chili. And with a smattering of logic and high school Spanish, if there is a dish called chili con carne ('with meat") that implies the existence of a bean only dish named chili. I think I'd rather continue discussing pork products in NJ because there is a chance I will actually get to taste some, no matter what is called.
